Daniel Richard is perched at the bar inside Montreal’s hopping Sofitel hotel, contemplatively sipping a glass of Chablis.

“It’s a good Chablisienne made by a co-operative,” he pronounces. “Co-operatives don’t usually make good wine, but this is an exception.”
